The semi-hard cheese made from raw milk, smeared with elderberry juice, is passionately produced by the Bachtel Dairy produced.
The Bachtel dairy has been in operation for around 40 years. They currently process approximately 1 million kilograms of milk exclusively from biodynamic farms. The milk is processed in a variety of ways, including into Holderbäseler (a type of elderberry liqueur). Thanks to their collaboration with... natürli the Bachtel dairy is regionally anchored.
