Raclette Mustard with Fennel
1 onion finely chopped
2 fennel cut into strips
1 tablespoon oil, bouillon powder, salt, pepper
Sauté the onion in oil, add the fennel, deglaze with a little water, season and simmer on a low heat until the fennel is firm to the bite.
Serve the vegetables with the raclette or put them straight into the pan and let the cheese melt on top.
Chili Raclette with Nachos
Ingredients for 4 pans:
1 bag of tortilla chips
4 slices of chili raclette cheese
1 small can of corn
1 jar of tomato salsa
1 jar of jalapaños
some coriander leaves
Put some tortilla chips in the pan, add raclette cheese and a few kernels of corn. Let it melt in the oven. Add some tomato salsa, jalapeños and coriander leaves and enjoy.
Or melt the cheese with some corn kernels on top. Place tortilla chips in the plate and pour the melted cheese over it.
Enjoy with some salsa, jalapeños and cilantro.
Tip: You can add as many side dishes as you like, e.g. with guacamole or pieces of pepperoni.
Raclette smoked with sauerkraut
Put a handful of cooked sauerkraut into the raclette pan
Place 1 slice of smoked raclette on top
Season with salt and pepper and let it melt in the oven
The intense aroma of the smoked raclette cheese harmonizes perfectly with the sauerkraut.
Ingredients for 1 glass of 300ml:
1/2 cm ginger, finely grated
1 shallot, finely diced
50 g dried figs, in pieces
50 g dried mangoes, in pieces
50 g dried apricots, in pieces
1/2 tablespoon olive oil
1 tablespoon agave syrup or honey
50 g dried cranberries
1/2 teaspoon ground cinnamon
1 map cardamom powder
50 ml apple cider vinegar
1 tablespoon lemon juice
150 ml of apple juice
Sauté ginger and shallot in olive oil, drizzle with agave syrup and caramelize lightly.
Add dried fruit, cranberries and spices, top up with apple cider vinegar, lemon and apple juice and simmer over medium heat for about 30 minutes, stirring occasionally. Add a little water if necessary.
Pour the chutney into a sterilized screw-top jar while it is still hot. It will keep for 3-4 weeks.
Alpine pancake with roasted onion raclette
What you need: cooked Hörnli, diced Gschwellti, fried onions, apple sauce
Put the pasta and potatoes in the pan, place the fried onion raclette cheese on top and let it melt in the oven.
Sprinkle some fried onions on top and enjoy with fresh apple sauce.
Oriental pan with raclette pumpkin seed curry
Ingredients:
1 small eggplant, diced
1 small zucchini, diced
1 sweet potato, peeled, diced
1 red onion, peeled, cut into eighths
6 dried dates, cut into small pieces
1 small can of chickpeas, rinsed and drained
1 lime, zest + juice
1 tbsp olive oil
1 EL honey
1/2 teaspoon cumin
1 teaspoons ras el hanout
salt, parsley, peppermint, chopped
1 pomegranate, seeds
Raclette cheese pumpkin seed curry
Place eggplant, zucchini, sweet potatoes, onion, dates and chickpeas in a bowl.
Mix the lime zest and juice with sesame oil, olive oil, honey and spices. Pour over the vegetables and mix.
Put everything on a baking tray and cook in the oven at 180°C for approx. 15-20 minutes.
Mix in the pomegranate seeds and herbs and serve in a bowl.
Put the oven-baked vegetables in the pan, place the cheese on top and melt it in the oven.
Serve with flatbread.
Raclette Hawaii with nature Raclette
What you need: ham, pineapple and raclette cheese.
Place 1-2 slices of finely sliced ham in the pan, then place a slice of canned pineapple and a slice of natural raclette cheese on top.
Melt in the oven, season with paprika and enjoy.
Bündner Pfännli with Raclette Dried Meat
Ingredients:
200 g barley
a little butter
1 onion,
1 carrot
1 leek
1 pc. celery
8 dl broth
salt and pepper
a few slices of dried meat Raclette
Peel the onion and vegetables and dice finely.
Melt the butter in a pan. Add the diced vegetables and pearl barley and sauté in the butter, then deglaze with the stock and simmer on a medium heat for 30-40 minutes. Check the liquid and add a little more if necessary.
Put the barley risotto in the pan and melt the raclette cheese over it or serve as a side dish to the raclette.
Tip: serve with finely chopped dried meat.
Bavarian Raclette with Beer Raclette
This is what you need: 4 white sausages, warmed, peeled and sliced, 8 slices of beer raclette cheese, 1 red onion in rings, sweet mustard, 4 pretzels
Put the white sausage slices in the pan, place the raclette slice on top and sprinkle the onion rings on top. Melt in the oven. Enjoy with sweet mustard and the pretzel.
Tip: Blue or mustard raclette cheese also goes well with it. Combine with mushrooms or diced ham.
orange topping with pink pepper
This is what you need: 3 tablespoons bitter orange jam, 1 teaspoon crushed pink peppercorns, some fresh finely grated ginger, orange juice from 1/2 orange, orange fillets from 1 orange
Put the orange jam with orange juice, peppercorns and ginger in a pan and bring to the boil. Add the halved orange fillets and simmer for 2 minutes. Allow to cool slightly and serve as a topping for raclette.
Asian pan with raclette black garlic
Ingredients:
asian noodles
Asian vegetable mix, frozen
1 small onion, cut into thin strips
sesame oil, Asian spice mix
salt and pepper, black sesame
fresh coriander, finely chopped
a few slices of Raclette black garlic
Sauté the onion in sesame oil, add the vegetables and simmer over a medium heat until soft. Season well and adjust seasoning to taste. Mix in the black sesame seeds and coriander.
Cook pasta in salted water.
Put the pasta and vegetables in the pan, place the raclette slice on top and melt.
Paella pan with saffron raclette
Ingredients:
1 cup rice
2 cups of broth
2 tbsp olive oil
1/2 onion, finely chopped
1 sachet of saffron
frozen beans and peas
1 clove of garlic, pressed
black olives
Cherry tomatoes
1 chicken breast and some thawed shrimp
salt and pepper, paprika
Raclette cheese saffron
Sauté the onion in olive oil, add the rice and saffron, deglaze with stock and cook over medium heat until soft.
Sauté beans, peas and garlic in olive oil and cook over low heat until soft.
Cut the chicken breast into thin strips and season. Season the prawns as well.
Mix the vegetables with the rice, arrange the black olives, cherry tomatoes, meat and prawns in bowls and serve.
At the table, put the rice in the pan, add tomatoes and olives as desired, top with raclette cheese and melt.
In the meantime, place the meat and prawns on the grill and prepare. Enjoy together.
Raclette spice mix
Ingredients:
1 tsp salt
2 - 3 tsp paprika, sweet or smoked
1/2 teaspoon black pepper
1/2 tsp garlic powder
1/2 tsp nutmeg
1/2 teaspoon coriander
some caraway
1 pinch of clove powder
1 teaspoon dried tarragon
1 tsp chili flakes
Put all ingredients in a mortar and grind finely. Store in a tightly closed container.
Tips: Try different combinations, many different dried herbs are suitable, such as turmeric, curry or even dried tomatoes.
If you don't like it that spicy, leave out the chili flakes.
