Cheese of the month of November: Mountain Spruce
Our cheese of the month for November is the mountain spruce. Baked, it warms the heart and soul during the darker and colder time of year.
What is special about the mountain spruce
The spruce bark gives the creamy soft cheese its distinctive resinous aroma and a reddish hue. Made with great passion by Bea and Willi Schmid of the Stadtlichäsi Lichtensteig GmbH.
Recipe tip: Bake mountain spruce
In the cold season, baked mountain spruce is a heartwarming treat.
- Take a large mountain spruce out of the refrigerator and preheat the oven to 180°C.
- Bake the cheese for 15 minutes until golden brown, then remove it.
- Cut a cross into the top crust and carefully open it up – this creates a wonderfully creamy cheese fondue right in the crust.
- Return to the oven for another 5-10 minutes until the cheese is bubbling and smells delicious.
This goes well with fresh crusty bread or hot boiled potatoes – perfect for dipping and enjoying.
